Local 'shrooms make no-fuss pupu
| |||
Next time you're at Costco, be on the lookout for a rather unassuming product that makes a great no-fuss pupu: Exotic Mushroom Poke, from Hamakua Heritage Farms in Laupahoehoe. Reader Phyllis T. e-mailed me about this one: She likes to serve the 1.5-pound containers of marinated oyster mushrooms with pasta, rice or vegetables, but I also think they're great as is. Or you can try mixing in fresh raw 'ahi, 'aku or other fish or even canned clams (drained) or abalone (drained and roughly chopped). The marinade is a pleasant vinaigrette.
