Regular menu options include toro sashimi with caviar and microgreens; Maine lobster carpaccio with sweet onion and cilantro; big-eye tuna pizza with shiso; and grilled walu, a Hawaiian butterfish, with shiitake mushrooms, pearl onions and tosa sauce (a mixture of soy sauce and bonito-flavored vinegar).
