Conrad Aquino, left, a chef at The Kahala Hotel & Resort, will give a free cooking demonstration at Macy's, Ala Moana Center at noon Saturday.

He's planning a mouth-watering menu: hazelnut-crusted Kona Blue Farm kampachi with Moloka'i sweet potato and pipikaula croquettes dressed with Kula vine-ripened tomato beurre blanc, plus saffron agnoletti (a type of pasta) with Kahuku corn, ricotta and shimeji mushrooms, sage-browned butter, caramelized Maui onion, thyme crostini and candied fennel chips. Mariposa at Neiman Marcus is reviving its "Cheese Culture" series tonight with a cheese tasting and wine pairing designed by its new chef de cuisine, Marc Anthony Freiberg.
